The Professional Chef Course in Italian Cuisine at The Chef Academy of London is a 325-hour chef training programme designed for students who want to become professional chefs with a strong focus on Italian cuisine.
This course combines academy-based training with structured restaurant-based learning, helping students develop the practical skills, confidence, and professional understanding needed to prepare for a career in Italian kitchens, restaurants, hotels, private dining, or the wider hospitality industry.
Students begin with 75 hours of training in our development kitchen, where they are guided through the foundations of professional cooking and Italian culinary techniques. This stage covers essential preparation methods, knife skills, kitchen organisation, hygiene standards, cooking techniques, flavour development, presentation, and the discipline required in a professional kitchen.
The programme introduces students to both traditional and modern Italian cuisine, helping them understand the ingredients, methods, regional influences, and techniques that define Italian cooking. Students develop their knowledge from the basics through to more advanced preparation and presentation.
After the development kitchen stage, students continue with 250 hours of structured training inside selected Italian restaurant partner kitchens. During this part of the course, students follow The Chef Academy of London training syllabus while experiencing the rhythm, standards, organisation, and discipline of a real Italian professional kitchen environment.
This restaurant-based training forms part of the educational programme. It allows students to develop practical awareness, learn from experienced professionals, and understand how Italian dishes are prepared and presented in a professional setting.
Throughout the course, particular attention is given to nutrition, taste perception, recipe development, presentation, and the balance between traditional Italian cooking and innovative culinary methods.
