Hospitality Management and Advanced Food Science Course

The Hospitality Management and Advanced Food Science Course at The Chef Academy of London is one of our most complete professional culinary programmes. It is designed for students who want to become professional chefs while also developing the knowledge and confidence to understand how a professional kitchen, restaurant, or hospitality business is managed.

This 600-hour programme combines practical chef training, professional kitchen experience, fine dining exposure, advanced cooking techniques, food science, Michelin-star restaurant training, and hospitality management. It is ideal for ambitious students who want a serious pathway into the culinary and hospitality industry, whether their goal is to work as a chef, progress towards senior kitchen roles, or prepare for opening their own business in the future.

Students begin with 150 hours of training in our development kitchen, where they are taught by our Executive Chef. This first stage introduces the foundations of professional cooking, including essential preparation methods, kitchen organisation, hygiene standards, knife skills, core cooking techniques, teamwork, discipline, and the structure of a professional kitchen.

After completing the development kitchen stage, students move into 200 hours of training in one of our fine dining restaurant partner kitchens. This gives them the opportunity to experience the pace, standards, and expectations of a real professional restaurant environment. Under the supervision of the Head Chef, students follow a structured training programme covering the main sections of the kitchen, helping them understand how a professional brigade operates during preparation and service.

The next stage focuses on advanced cooking techniques and food science, preparing students for a further 200 hours of training with one of our Michelin-star restaurant training partners. This part of the course introduces students to higher-level culinary standards, precision, refined presentation, modern techniques, consistency, and the discipline required in elite kitchen environments.

Once the practical training has been completed, students begin their hospitality management training. This final part of the programme is designed to develop a broader understanding of how to manage a hospitality business successfully. Students are introduced to key areas such as kitchen operations, team organisation, restaurant management, business awareness, professional standards, and the responsibilities involved in leading or managing within the hospitality industry.
